Baked Avocado is both healthy and easy brunch to make, perfect for rush morning. Avocado is full of healthy fatty acids and high protein count.
3 large Avocados
3 slices Smoked Salmon (cut into pieces)
Pinch of Cayenne pepper
1 tbs chopped Chives
Toasted bred to serve
Preheat the oven to 425 degrees
Slice the avocados in half, take out the pit and scoop out bit of flesh out, just enough so the egg will fit in the center. Add little a little salmon to each and then the egg yolks. Place the avocados in a baking dish. Place in the oven and bake for 15-20 minutes. When ready then season with pepper and chives of your choice.
