Mexican Bean Salad

Let´s spice up this Monday with a colorful and refreshing bean salad, are you ready?


1 can black beans

1 can kidney beans

1 can cannellini beans

1 green bell pepper (chopped)

1 read bell pepper (chopped)

1 read onion (chopped)

1/2 cup olive oil

1/2 cup red wine vinegar

2 tsp fresh lime juice

1 tsp salt

1 clove crushed garlic

1/4 cup chopped fresh cilantro

1/2 tsp ground cumin

1/2 tsp ground black pepper

1 dash hot pepper sauce

1/2 tsp chili powder



Drain and rinse the beans. Combine beans, bell peppers and onion in a large bowl. Then whisk together olive oil, red wine vinegar, lime juice, salt, garlic, cilantro, cumin and black pepper. Season to taste with hot sauce and chili powder. Pour olive oil dressing over vegetables and mix well, serve cold.
